As the evenings slowly draw in, we’ve been dreaming up something special for the cooler months: a long, lazy, and utterly indulgent Sunday, with a Spanish soul.
The star of the show? Suckling pig, cooked with all the patience and love it deserves. The skin is roasted to a crisp, golden perfection, while the meat stays melt-in-your-mouth tender and full of flavour. Achieving that shatteringly crisp skin is an art: the process starts days before. It’s the kind of dish you can’t rush and you’ll taste every minute of that care.
